Halloween Pumpkin Pie Granola, Vegan & Gluten-Free

This warm and festive granola is filled with yummy and nutritious ingredients. It makes for a perfect yogurt or smoothie topper to satisfy your sweet and salty cravings! Be careful, you might end up eating it all in one sitting (I did).

 
 

INGREDIENTS:

3 cups of gluten-free rolled oats
1 hefty cup of slivered almonds
1/3 cup sprouted pepitas
3 Tbsp coconut sugar
1 big pinch of flakey sea salt
3/4 tsp pumpkin pie spice

3/4 tsp cinnamon
1/4 cup coconut oil
1/3 cup honey (you can also absolutely use maple syrup)
1/3 cup pumpkin puree

RECIPE

Serves 2-3

1. Preheat oven to 350 degrees.

2. Mix the nuts, seeds, spices, and coconut sugar together in a bowl.

3. In a small saucepan, heat up oil, honey, and puree on a low heat.

4. Drizzle heated mix over nut/seed mix. Stir up!

5. Lay parchment paper over a baking sheet. Spread granola over sheet until it’s evenly spread (try not to have any gaping holes when spread out).

6. After 10 minutes in the oven, flip the granola (try to keep things pretty chunky). Put back in the oven for 10 minutes!

7. Let cool and ENJOY THIS HALLOWEEN TREAT!
